Changing language or spelling options

Is there any way to change the language or spelling option in 5.2.1? It seems to be set for US English, when I tend to use UK English? At the very least it'd be great to be able to turn off the displaying of alleged "errors" as in "behaviour" (sure the the offending 'u' seems redundant, but it's there in UK English).

You should be able to select British English in System Preferences -> Language & Text (or International if you're on Mac OS X 10.5), and OmniGraffle should abide by those settings.
