in current version, if you are trying to modify an existing table that you created with omnigraffle, it's really inconvenient without the function of add/delete rows/columns, that means you have to destroy the existing information in that table and do the rearrangement.

To delete a row or column, select the row or column, and hit backspace on the keyboard.
