ISTM that if I assign a project to an In-box item, it may as well automatically jump straight to that project.

Similarly, If I re-assign an item within a project it should jump to the new project.

... or is there a tactical advantage for keeping items in one or no project while labelled with another project?

Use Clean Up to move the item to its new home. The current "sticking around" behavior was widely requested as better than having items disappear in the middle of editing them.
