Is there a way to get the Gantt Chart to display a grid for readability?

Probably not in the way you're imagining. There are already vertical grid lines on the Gantt. There color is configurable on the Project: Colors inspector. Look for the "Separator" color. There are no horizontal grid lines, however you might like to try out alternating row colors in the same inspector.
