My guess is because OmniFocus doesn't use Mac OS X's sync services, which seem to be unreliable with larger amounts of data (at least it seems to struggle with apps like Yojimbo). Instead, OmniFocus uses a custom sync solution that allows robust syncing with multiple Macs *and* iPhones/iPods (OS X's sync services don't sync third-party apps with the iPhone).

There may be other reasons as well, but the Omni folks would have to provide insight.
