Ive noticed this as well, if you add screen shots or images the pdf's get huge quickly. I use preview and shrink them with no loss of quality.

I believe this is new with Lion. You save files...

I believe this is new with Lion. You save files as versions now.

There is still a wary to save as - use the open duplicate function then choose to save it and you'll be propelled for a new file...
