In addition to looking at Axure, Omni should check out tools like http://rapidrabb.it/ This is very much like producing a diagram in OG, with options to add attributes to elements placed on the page....

Sabrina, when printing from OmniGraffle:

1) select the Paper Handling options from the drop down menu
2) check "Scale to fit paper size"
3) check "Scale down only"
