Help with 'Utiltites'

I decided I didn't want to make a style for all level 1 titles but couldn't find a way to get rid of it. The plus sign is enabled but the minus sign is grayed out. How do I get rid of the styling...

How do I "keep typing" in a cell I've already left.... I need to start a new line or paragraph but when I hit return it...

Can I "color" the Topic name?

Okay, here's a beginner's question. Whenever I color the "Topic" of a new outline, the color reverts back to black when I click out of the box. What am I doing wrong?

I'm on the search for a good outlining program so I watched the Video tutorial for OmniOutliner. I'm impressed because it looks so "intuitive", if that word means an easy, common-sense way of using...
