How do I show Breaks in a task?

I have a single task that spans 1 day, but how do I show several stop/start times during that single timeline, or do I have to show each one as a separate task?

How do I add multiple projects?

This should be obvious but I cannot work out how you do this?

I can create a new Project and add the Tasks, but how do I add another Project with drop down tasks as I need to manage multiple...
