I know this is an old post but in case someone else stumbles across this workflow like I did the answer is just type "now" in the start field.
Now if only there were a preference to have it show the day and time in the actions list instead of just the date or today, yesterday etc. I know you can see this info by clicking on it or from the inspector, that is just a bit slower for me.
