The up-to-date list is built in to the program, see the Help menu.
No shortcuts for Union/Intersect/Subtract, but you can create your own with the System Preferences facility for doing so. Open the Keyboard section, click on Keyboard Shortcuts, click Application Shortcuts, click the + button, set the application to OmniGraffle, Menu Title gets whatever the function is called in the menu (Union Shapes, for example), pick your keyboard shortcut.
