Yes, we've had a few reports of this problem so far. We're still trying to figure out what's going on and what's causing it, so if you're running into the problem, we'd love to hear from you—especially if you can provide any console log messages, a system profiler report, a description of your system, or the like. It seems to mostly happen to people with Macbook Pros, often with dual displays, but isn't associated with any particular activity in OmniGraffle. It's interesting that both of you got error messages about an NVidia "graphics channel exception".

For what it's worth, you might be able to avoid rebooting if you ssh into the machine and kill the window server. (Just killing OmniGraffle isn't enough; the window server itself has gotten stuck by that point.) If this works for you, let us know... we're having a hard time getting this crash to happen to us so we can investigate it.
