You can paste in photos via copy and paste — open Photos, choose your photo, tap and hold, tap Copy, switch to OO, tap and hold where you want it, tap Paste. I haven't noticed any apps that allow you to copy/paste the other data types you mentioned, although Photos offers to copy video clips (can't paste them into Mail, however, so I'm suspicious that nothing is happening).
