I haven't got the iPad version yet, so I can't talk about that; but you
can email a task to OF Mac through the Mail rule. Tags are a different issue, but again as far as "GTD" per se is concerned, you'll notice that David Allen himself is "skeptical" of them (podcast on "doing" if I remember correctly).
