Open your backup file (probably located in Documents/OmniFocus backups in your home directory) by double-clicking on it once you've got OmniFocus up and running. The backup will open in a separate window titled something like "OmniFocus 2008-11-20 104018" and you can simply drag the missing project from that window to the sidebar of the main window. Then close the window from the backup so you don't accidentally enter some data there.
