Actually, it often does take about a week. Over this past week, it seems like they've placed a big priority on getting updates for the Retina-display on iPad through the review process
really quickly (Instapaper's update was approved in just a couple hours, last Friday). Non-universal iPhone apps are probably experiencing a relatively longer average review times.
Also, from the sounds of it, the updated iPhone app wasn't submitted for review until
after the other updates were already released -- it was probably submitted around the start of this week, so even now it's only been maybe 2-4 days in review
