Variables are already there:

Edit Menu --> Insert Variable

As for object instances, you can do this as well via LinkBack. Just make a shape or group, copy as PDF from the Edit Menu, paste, and then when a change is desired double-click the pasted PDF and you'll get a separate editing window that you can make changes to.
