Currently we use the iPad's Region Format settings to determine how the number fields are formatted. If a column was formatted under a different Region Format we attempt to preserve that until you change the column formatting. Unfortunately, this means that the only way to get formatting for a different currency in a document at this time is to set your iPad Region Format to the region in question. You can find the iPad Region Format settings in the Settings.app under General > International > Region Format. Don't forget to set it back to your own Region settings when you're done adding your data to OmniOutliner!

If you'd like to see us support formatting for different currencies in a future release please email the support ninjas, they can make sure the requests get recorded. (More popular feature requests tend to be assigned higher priorities.) Hope that helps!
