Oh boy, this is bad. I'm getting exactly the same problem, with this appearing in the syslog a million times:
May 23 00:42:13 Mac-Pro kernel[0]: NVChannel(GL): Graphics channel exception! status = 0xffff info32 = 0x3 = Fifo: Unknown Method Error
Is there any way to prevent this from happening? Do you have any contact with Apple? Are they working on new drivers? This is very frustrating as I basically can't use OmniGraffle reliably -- and I just upgraded to it today for $70+ bucks =(.
