Omni has submitted OF iPhone 1.6 to the App Store for approval. Once Apple approves it, you'll be able to create a perspective on the Mac sorted by Completed Date, then sync that perspective to the iPhone. That will probably do what you want. (While I have been alpha testing the 1.6 release, I don't have any perspectives that show completed items. Thus, I'm not certain of my answer.)

Currently you have to have OF for Mac to create perspectives.
