Colors are assigned by status, not individually. Priority exists in the presentation of the Next Action, but not as a tag or characteristic of an action.
Search around this site, but more importantly, read a bit on Allen's GTD. OF helps you not to have to ask this question.

We don't support changing the color of an individual action, project, or context. As mentioned in the OmniFocus help, "In order to avoid too much fiddling around, OmniFocus doesn't support styling individual items. Instead, you can style all items of a particular type."
