You can do this in OmniGraffle 5 pro. To insert a row or column, select a cell and go to "edit" > "tables" > "insert row" or "insert column". http://fritzboyle.com/wp-content/upl...-Shortcuts.pdf
To delete a row or column, select the row or column, and hit backspace on the keyboard.
