I see sheets of paper with what looks like a checklist, but I don't get what the rest of the icon is all about?

A nod to the Hipster PDA?

If you look at the 512 pixel version of the icon (perhaps in the Finder's Cover Flow view), it certainly looks like an hPDA with a nice purple, translucent, protective cover with the Omni logo and a simple, white or silver binder clip. I think it's clever, cute, and appropriate for the app and its heritage. Nicely done.
I especially like that it uses purple (or violet?). That's not a common color in my Dock and makes OmniFocus easier to spot at a glance. As for the text, it looks like Gaelic (but what do I know): 1. <obscured by clip> tusa Shean 2. Conas a ta tu? 3. Taim go maith 4. Sloan abhaile Followed by a sketch of a triangle with circles at the points.
