I did a batch open of too many documents and now OmniGraffle is crashing every time I start it up.

How can I tell OmniGraffle to stop trying to open previously open files?

Hold down the shift key when opening an application to prevent it from opening previously-open windows.

To change the default behavior all apps, go to System Preferences > General and check "Close windows when quitting an application."

I was clicking that little red dot like mad hoping I could close the windows before the program crashed. No such luck. Back in business now!
