Is there anyway to make the width of the sidebar wider, and for OF to open new windows with that width?

Hey DragonPensando! Welcome to the forums.
You can, we'll just want to update the appropriate Perspective after the change is made. Once your preferred width is set, head to Perspectives→Save Window As→{Current Perspective}. That's it! (You might also check that your "Layout" settings are being saved for each perspective you're modifying. Check out Perspectives→Show Perspectives, and then the "Restore" settings.)
