How can I find the actions that were completed on a given date?

For instance I want to see a snapshot of my completed actions last Weds. Or even to expand on point Jan 28, 2008. Or a week of time two months ago.

If the only data piece I have is a date how do I access the other associated information with that one piece of data?

Is this possible?

I used OmniOutliner for years and I used it as both a tracking and planning tool.
The built in "Completed Actions" perspective should get you started - if there's stuff you need that this perspective doesn't cover, use the "Send Feedback..." item under the help menu to let us know what additional stuff you need.
