When I add a new task between two colored tasks, it is the default blue. Is there a way to let OmniPlan know, for example, if you insert a new task between two orange tasks, that one should also be orange?
Or a way to grab a color from another task, instead of going through the inspector?

No and no.
We have a feature request open for all the tasks in a group to inherit the group's color.
