I can see that I can sort by name the actual tasks and projects in task windows. But what about sorting projects in the project windows to the left?

If you select the contents (or a portion thereof) of the sidebar, then choose Edit->Sort you will be given a choice of ways to do a one-time permanent sort of the stuff in your selection. It is unlike the View Bar settings in that it actually changes your database. You can also use this same technique in the main panel (the outline) if you wish to rearrange the contents of a project. Finally, you can use it to reorder your contexts when in the context mode view.
