With the latest release of 4.2.1, I've decided to just use the native Notes app on my iPhone and iPad. My notes sync perfectly across my devices, and I can sync them to my Notes section in Mail. I don't have the 'Link' feature which allows me to connect a note to a Task in OF, but at least I can have access to all my Notes on any of my devices, which is a good thing.
Right now this is my set up in Notes:
MobileME: Personal Notes and my place to gather my thoughts
@Work: All my Work related notes

Mail: Where I can do richer edits and reviews of my captured notes (i can drag the link from the Note on the desktop to OF and embed it in a Task, so I do get a link, but it requires desktop processing for it to work).
With the recent update of iOS it's all playing rather nicely.
