I have the task and resource information input to the project. After leveling, how do I determine total project hours and total hours for each resource?

Go to the Resource View and go to "View" > "View Options", then check the "Total Hours" column on. That will show the total hours per resource.
To find out the total project hours, click on the text at the bottom of the OmniPlan window to the right of the plus and minus buttons.
