I enable full page zoom, but now how do I disable it?

Full-page zoom should be on by default but if you want to turn it off so only text changes size you can quit OmniWeb open a terminal window and run this command at the prompt:
defaults write com.omnigroup.OmniWeb5 WebKitDebugFullPageZoomPreferenceKey 0 You can return to the default behavior within OmniWeb by running this: defaults delete com.omnigroup.OmniWeb5 WebKitDebugFullPageZoomPreferenceKey
