Is there any way to change this:
I enter in my quick entry and assign the project and context then hit return. The context window is still live and it then takes hitting the return (enter key) two more times to make the quick entry window go away and move on with things.

Try cmd-s

It took me a bit to get used to when they changed the default for return saving, but now I'm used to it.
