I teach the same class say 5 times each week at different times and on different days

So what I'd like to do is create one task say
Week 1 Topic: Budgets
and then give it five different due dates and times

How do you suggest I do this?

Create a task for each due date?

Or one task with the nearest due date defined. When done, redefine the due date to the next date.

Thanks for your suggestion but it won't work for me.

When you do that you lose all the activities except the last so it is hard to keep track of what has been done. Keeping track of what has been done is essential in my role when I have to account for my time.

You would need to set up a project or task for each class.
