Are there keyboard shortcuts or a way to add icons to the toolbar that could get me to the 4 default perspectives (Remaining, Due, Completed, All?)

You could make either one.

You can add keyboard shortcuts through the keyboard preference pane in system preferences.

You could add an icon to the toolbar by selecting the perspective you want and choosing "Make new perspective from window". Of course this gives you a second copy of the perspective, but it will also give you an icon that you can add to the toolbar.
