When I look at the product page for OF I see a picture imbedded in an OF action...

I have tried again and again to replicate this, and while I do get a jpg icon that I can open with Quickview it will not sync with my iPhone.

I tried both drag and ALT+drag none of those seem to work

Any image greater than 512 pixels in width or height will be represented as a file attachment icon. You can adjust that pixel limit with the following hidden preference:

defaults write com.omnigroup.OmniFocus OSImageAttachmentMaximumSize -int 640

In this case, the limit is being set to 640 pixels.

Just paste this line into the Terminal app with whatever pixel setting you want and relaunch OmniFocus.

To return to the default setting, you can delete your changes with this line:

defaults delete com.omnigroup.OmniFocus OSImageAttachmentMaximumSize
