is there a way to show the start date as just the date without the time?

We think that time of day may be significant for some projects and not for others, therefore rather than making this a preference, it's a project setting. Look in the Project: Formatting inspector and you'll find the interface for turning on and off the time and seconds.
Note that this only affects the display. Time still exists for these projects. If you want to experiment with the notion that 1 hour or 1 day is the minimum significant time interval in your planning, check out the Granularity setting on the Project: Information inspector. -Tom
