I am trying to open a blank "Book Draft" template. But every time I go to "New From Template" and select "Book Draft," the template that opens is already filled in with text. I want a blank template that I will fill with my own text.

Can anyone tell me how to open a blank "Book Draft" template?
 
Open the book draft as you've been doing. Remove the existing text or otherwise alter the contents to your liking. Now do File->Save as Template... and save it. The text is there simply to give you an example of how the template looks.
