I prefer the classic Macintosh user interface which relies heavily on menus and not on toolbars, etc. I have set things up so a new document comes up with an unadorned page, but have not been able to get rid of the "Canvas" bar on the left or the rulers. Is there a way of setting the default "view" menu so that "canvas" and "rulers" is unchecked in a new document?

You can create a new Template (via the File Menu -> New Resource), hide the sidebars and rulers, save it and make that new template your default.
That should bring up all new documents without the adornments. Hope that helps,
