How can I change the default font for objects from 12 point Helvitica (gag) to something else?

Make yourself a new document template where you've option-clicked on the Text tool and set the font to something you prefer.

1. I went to New Resource > New Template...
2. I opened the Clouds template
3. I option-clicked the Text tool and set the font to Avenir Next Medium
4. I saved the template
5. I opened a new document using the new template
6. I added a topic
7. The text was still in Lucida Grande Regular

Ah, that's a diagram style. You make a new diagram style, select the text in the style document, set the font as you want, then save it. After that, you can apply that style to your document with the Format->Choose Document Style tool.
