I am a new user of Omnifocus. I have viewed the videos and read the tutorials when I began the set up process. I entered several projects and subprojects during this process, but later, when coming back into Omnifocus I did not see my projects.

Could anyone help me? Did I hit the wrong key to make these disappear or am I doing something obviously wrong?

They are probably hidden by focus or filters.
I would start, through the main menu, with:
View > Projects
View > Show All Projects
or
Perspectives > Revert to default view
or
Perspectives > All items
