Is there a way to adjust the review interval on all projects at once?

The Omnifocus for iPad manual here:

says this (page 22):

"To change the default review interval for all of your projects, adjust the review interval when there are no projects left to review"

When I try to do this, the "last reviewed" date button is inactive/greyed out.

Any ideas?
