Often times, I would like to keep my page view set at a custom 125%. The only option that I see is "Keep Fit in Window". Is there a way to set a default to make my view 125% as default?

Wrong forum (you've posted in the OmniWeb rather than OmniGraffle forum), but the way to do it (at least for the first canvas) is to create a template with the zoom set at 125% and set that template as the default in the preferences.
