Is there any way to defer both the start and the due date at the same time (e.g., by putting start 1d due 2d in the dialog box)?

Not sure which script you might be referring to, and "later script" is an unsatisfying search target.
RobTrew's written a rather comprehensive tool for manipulating dates in OmniFocus, SetDates: http://complexpoint.macmate.me/Site/...ach_other.html

Check out the most recent version of the script at https://github.com/pxldot/later. Should work exactly as you suggested.
