And back up to around 2 minutes today. Great tool... sometimes.
Is this variation in sync times expected, or is there something I can do about it?

There will always be a little variation with any wireless syncing. But the variation you describe sounds like more than that. (Unless you switched from WiFi to Edge or something.)
There will also be variation depending on how much new data needs to be transferred. When all your machines that run OmniFocus sync regularly, sync times will generally stay pretty consistent. If one computer hasn't been synced in a while, it can slow down syncing for all the others until it's synced back up again.
