Can anyone point me to the description of what the color schemes are for name titles and how OF decides which color to use when?

Not sure what you are asking.
The way I stumbled upon changing colors is to put 'fonts' in your toolbar from 'customize toolbar' then when you click on it, you can change the color and size of your fonts
