While entering my webdav password the question came in mind: is there a global Keychain equivalent on the iTouch that is locked as long as the device is locked or how are these passwords saved by OmniFocus (or apps in general)?

Yes, OS X for iPhone has a keychain much like OS X for Mac does, and yes, OmniFocus uses that keychain to store passwords.
