Is there some sort of guide that lists all of the AppleScript names of things in Omnigraffle and how to use them? I've found some example scripts, but it's difficult to cobble them into actual documentation.

Have you looked at the Applescript dictionary for OmniGraffle? You can view it in the Script Editor application with File->Open Dictionary. It's still challenging to figure it out, but it should at least be comprehensive.
